Vastasa salad is a typical Sicilian dish, from Palermo to be exact, easy to make and rich in flavor.

A dish that can be both a rich side dish and a satisfying main course, accompanied by good homemade bread. The word “vastasa” in dialect indicates a rude and vulgar person, but in this salad, it simply highlights the use of many ingredients and dressings.

Ingredients

  • 1.3 lbs potatoes
  • 10 oz green beans
  • 7 oz cherry tomatoes
  • 1 red onion
  • 3.5 oz black olives
  • white wine vinegar
  • oregano
  • extra virgin olive oil
  • salt

Preparation of the Vastasa Salad

  • Wash the potatoes, put them in a pot, cover them with water, and place them on the stove.
    Let them cook for about twenty minutes from the boiling point until you can easily pierce them with a fork, then drain and let cool.

  • Meanwhile, clean the green beans and cook them in plenty of salted boiling water for about ten minutes, then drain and let cool.
    Clean the onion, slice it into rings, and place it in a bowl with a tablespoon of vinegar, then cover with cold water and let it rest.
    Wash the cherry tomatoes and cut them in half.

  • Peel the potatoes and cut them into chunks.
    Place the cherry tomatoes, potatoes, green beans, olives, and well-drained onion in a bowl. Season with plenty of oregano, extra virgin olive oil, and salt, and mix thoroughly.
    Serve your vastasa salad.
