Arugula and Mozzarella Pasta

Arugula and mozzarella pasta is a tasty summer main dish, easy and quick to prepare.

It is not cold pasta, but a pasta dish with no-cook dressing, tasty and inviting, with few simple ingredients and lots of flavor, perfect for lunch or dinner, alone or with friends.

Ingredients

  • 11 oz pasta
  • 7 oz mozzarella
  • 9 oz cherry tomatoes
  • 1 bunch arugula
  • extra virgin olive oil
  • salt

Preparation of Arugula and Mozzarella Pasta

  • Bring a pot of water to the boil for cooking the pasta.
    In the meantime, drain the mozzarella from its preserving liquid and cut it into pieces, placing it in a colander.

  • Wash the arugula, dry it, and place it in a bowl.
    Wash the cherry tomatoes and cut them in half.

  • Cook the pasta al dente, salting according to your taste, drain it, and add it to the arugula.
    Add the cherry tomatoes, mozzarella, a little extra virgin olive oil, and mix thoroughly before serving your arugula and mozzarella pasta.
