Ingredients for the Soft Tart with Strawberry Cream
- 2 eggs
- 3.5 oz sugar
- 4.5 tbsp vegetable oil
- 0.5 cup water
- 5.3 oz all-purpose flour
- Half packet baking powder
- 14 oz strawberries
- 4.2 oz sugar
- lemon juice (from half a lemon)
- 2 tbsp cornstarch
- whipping cream (or meringues)

Preparation of the Soft Tart with Strawberry Cream
Prepare the base.
In a bowl, using electric beaters, beat the eggs with the sugar until they are fluffy and homogeneous.
Add the water and vegetable oil gradually, continuing to mix with the beaters.
Incorporate the flour and baking powder and continue to work the mixture until it is homogeneous.
Grease and flour a 9.5-inch smart tart pan and pour in the prepared mixture, leveling it.
Bake in a preheated static oven at 340°F for twenty minutes, then remove from the oven and let cool.Meanwhile, prepare the filling.
Wash the strawberries well and cut them into pieces, removing the stems.
Blend them with the sugar and the juice of half a lemon until you have a homogeneous mixture.
Strain it through a fine sieve to remove the seeds, collecting it in a saucepan off the heat. Add the sifted cornstarch, stirring with a whisk to avoid lumps until everything is homogeneous.Bring the saucepan to the heat and stir again until the cream thickens.
Transfer it to a bowl, cover with plastic wrap directly touching the surface of the cream, and let it cool.
When both preparations are cold, pour the cream into the cavity of the smart tart.
Complete your soft tart with strawberry cream with a few dollops of whipped cream, or with meringues, and fresh strawberries.
