Pan-fried smashed potatoes are a delicious side dish, easy to make and very tasty.
These are boiled potatoes, smashed and then pan-fried to create a crispy and flavorful crust, seasoned to taste. Perfect to accompany any type of main dish, whether meat, fish, cheese, or vegetarian.

Ingredients
- 8 potatoes (medium)
- extra virgin olive oil
- rosemary
- oregano
- salt
Preparation of Pan-Fried Smashed Potatoes
Wash the potatoes thoroughly to remove any soil residue. Place them in a pot, cover them with water, and put the pot on the heat.
Let them cook until they can be easily pierced with a fork (depending on the size of the potatoes, this will take about twenty minutes from boiling).Drain and let them cool slightly.
Place them on a cutting board and gently smash them with the bottom of a glass to break them.
In a small bowl, combine some extra virgin olive oil, a pinch of salt, rosemary, and oregano to create an emulsion, mixing with a fork.
Then use a kitchen brush to apply it to the smashed potatoes.Heat a large non-stick pan on the stove.
Place the potatoes in the pan with the seasoned side in contact with the bottom.
Let them cook for a few minutes, brush the top with the emulsion, then flip them and cook the other side until golden brown.
Serve your pan-fried smashed potatoes immediately, piping hot.
