Sicilian style stuffed tomatoes are a tasty side dish, easy to make and very appetizing.
Tomatoes stuffed with breadcrumbs, anchovies, capers, and parsley, perfect to accompany any type of main course, meat, fish, or cheese, and to be enjoyed hot or cold.

Ingredients
- 6 tomatoes (vine-ripened)
- 7 oz breadcrumbs
- 2 anchovies in oil
- 2.8 oz black olives (pitted)
- 1 tbsp capers
- 1 clove garlic
- parsley
- basil
- extra virgin olive oil
- salt
Preparation of Sicilian Style Stuffed Tomatoes
Wash the tomatoes, cut off the tops, and using a knife and a spoon, gently hollow them out to avoid breaking them, keeping the pulp aside.
Heat a few tablespoons of extra virgin olive oil in a large pan and add the crushed garlic clove and chopped anchovies.Add the tomato pulp, salt, and cook over low heat for a few minutes.
Add a few basil leaves, the capers, olives, and stir.
After a few minutes, add the breadcrumbs, stir, and turn off the heat.Add a bit of chopped parsley and season with salt, if needed.
Fill the tomatoes with the prepared mixture, place them on a baking sheet lined with parchment paper,
Finish with a drizzle of extra virgin olive oil and bake in a preheated static oven at 355°F for about twenty minutes.
Serve your Sicilian style stuffed tomatoes hot or cold, according to your taste and the season.
