Ingredients
- Half chicken breast
- 10 green olives (pitted)
- 1 shallot
- lemon juice (from half lemon)
- herbs
- salt
- pepper
Preparation of Chicken Pâté
Boil the chicken breast in abundant salted boiling water.
Remove it with a slotted spoon, keeping its cooking water, and let it cool completely.Meanwhile, cut the olives into pieces.
Clean the shallot and chop it.
Shred the chicken breast and put it in the mixer with the juice of half a lemon, the chopped olives, and the chopped shallot.Start blending, adding a little bit of cooking water as needed each time, until you have a smooth cream.
Incorporate the herbs you prefer and adjust with salt and pepper.
Serve your chicken pâté with bread crostini.
