Mediterranean Pork Loin

Mediterranean pork loin is a tasty meat main course, very easy and quick to prepare.

Thin slices of loin that remain tender and never dry, enriched with cherry tomatoes, capers, olives, and oregano, perfect for any occasion, especially when you’re in a hurry but don’t want to give up on a delicious dish.

Ingredients

  • 1.32 lbs pork loin (thinly sliced)
  • 7 oz cherry tomatoes
  • 2.82 oz black olives (pitted)
  • 1 tbsp capers
  • 1 clove garlic
  • flour
  • Half glass white wine
  • oregano
  • extra virgin olive oil
  • salt

Preparation of Mediterranean Pork Loin Slices

  • Wash the cherry tomatoes and cut them in half.
    Dust the pork loin slices with flour, coating them well on all sides.
    Peel the garlic.

  • Heat a drizzle of extra virgin olive oil in a large pan and brown the garlic clove in it.
    Remove it and add the pork slices, browning them on all sides, then deglaze with the white wine.
    When the wine has evaporated, add the cherry tomatoes, olives, and capers. Adjust the salt, stir, and cover with a lid.

  • Cook for five minutes over high heat, add a sprinkle of oregano, stir and let it flavor for a few more minutes, then turn off the heat.
    Serve your Mediterranean pork loin immediately.
