Stuffed Round Zucchini with Eggs and Ham

Ingredients

  • 4 round zucchini
  • 4 eggs
  • 2.5 oz ham (diced)
  • cream cheese
  • Parmesan (grated)
  • salt
  • pepper

Preparation of Stuffed Round Zucchini with Eggs and Ham

  • Wash the zucchini and cook them whole for a few minutes in boiling water.
    Drain them and cut off the top horizontally about an inch from the stem, and with a spoon or a melon baller, carefully hollow out the center pulp without breaking them, leaving about half an inch at the edge and bottom.

  • Spread some cream cheese inside the hollowed zucchini to coat them evenly, and fill them with some diced ham, distributing it equally among all the zucchini.
    Crack one egg at a time into a small bowl, ensuring not to break the yolk, and gently slide it into each zucchini, one per zucchini.

  • Sprinkle the stuffed zucchini with plenty of grated Parmesan, a pinch of salt, and a dash of pepper, and bake them in a preheated static oven at 392°F for twenty minutes.
    Serve your stuffed round zucchini with ham and eggs hot, or cold, according to your taste.
