Zucchini tortillas are a delicious appetizer that is simple and easy to prepare.
Zucchini and a few other ingredients, baked in the oven and full of flavor for a dish perfect to enjoy plain, with sauces or savory creams, or filled with cold cuts, cheeses, or vegetables, or even used to fill sandwiches, according to your taste.

Ingredients
- 2 zucchini
- 1 egg
- 1.76 oz scamorza cheese
- breadcrumbs
- salt
Preparation of Zucchini Tortillas
Wash the zucchini, trim them, and grate them with a coarse grater.
Chop the scamorza cheese.
Gather the zucchini and scamorza cheese in a bowl.Add the egg, a couple of tablespoons of breadcrumbs, and salt.
Mix thoroughly.
Line a large baking sheet with a sheet of parchment paper.
Create thin circles of batter about 6 inches in diameter by spooning a couple of tablespoons onto the parchment paper and spreading them with the back of a spoon.Make all your zucchini tortillas this way, until you run out of the prepared batter.
Bake in a preheated ventilated oven at 338°F until lightly golden: it will take about 15 minutes.
Remove from the oven, let cool slightly, and serve in the way you prefer, filling them as you like or enjoying them plain.
