Linguine alla Verdemaire

Ingredients

  • 8.5 oz linguine
  • 5.3 oz peas
  • 4.2 oz canned tuna
  • 1 teaspoon tomato paste
  • Half onion
  • parsley
  • extra virgin olive oil
  • salt

Preparation of Linguine alla Verdemaire

  • Bring a pot of water to boil for the pasta.
    Clean the onion and slice it thinly.
    In a large pan, heat a few tablespoons of oil and sauté the onion for a few minutes.

  • Add the peas and well-drained, flaked tuna.
    Stir and let cook for about ten minutes.
    Meanwhile, cook the pasta.

  • Dissolve the tomato paste in a ladle of cooking water, add it to the pea mixture and adjust the salt.
    Let it flavor, then, saving a few tablespoons of the mixture to finish the dishes, blend the rest until you get a smooth cream.

  • Drain the pasta al dente, toss it with the prepared cream and mix thoroughly.
    Immediately serve your Linguine alla Verdemaire by completing the dishes with the reserved mixture and a sprinkle of chopped parsley.
