Ingredients
- 25 oz zucchini
- 2 eggs
- 3.5 oz mozzarella (grated or scamorza)
- 2 tbsps grana cheese (grated)
- 2 tbsps pecorino cheese (grated)
- breadcrumbs
- 1 clove garlic
- extra virgin olive oil
- salt
Preparation of the Zucchini Gateau
Wash the zucchini, trim them, and grate them with a large-hole grater.
Peel the garlic and let it brown in a large pan with a little extra virgin olive oil.Remove the garlic, add the grated zucchini, and let them sauté on low heat for fifteen minutes to dry them out.
Salt and let them cool.
Transfer them to a bowl and add the eggs, grated cheeses, and enough breadcrumbs to obtain a firm mixture.Butter and sprinkle a 9-inch springform pan with breadcrumbs and pour in the prepared mixture, leveling it.
Sprinkle the surface with a little more breadcrumbs, complete with a drizzle of extra virgin olive oil, and bake in a preheated static oven for thirty to thirty-five minutes, switching to grill mode in the last minutes of cooking to brown it well.
Remove from oven and serve your zucchini gateau hot or cold, according to your taste.
