Ingredients
- 11.3 oz pasta (of the format you prefer)
- 24.7 oz peeled tomatoes
- 3.5 oz black olives
- 2 cloves garlic
- 1 chili pepper
- pecorino cheese (grated)
- oregano
- parsley
- extra virgin olive oil
- salt
Preparation of Pasta alla Turiddu
Put a large pot of water on the stove for cooking the pasta.
Meanwhile, crush the peeled tomatoes with a fork and peel the garlic cloves.
Heat a base of extra virgin olive oil in a large pan or wok and add the garlic and chili pepper.Let the garlic brown and add the peeled tomatoes, salt, and let cook for ten minutes.
Chop the olives and add them to the tomatoes with a teaspoon of oregano, mixing thoroughly.Cook the pasta al dente after salting the water, drain it keeping some cooking water aside, and place it in the pan with the sauce.
Add some grated pecorino cheese and mix thoroughly.
Serve your Pasta alla Turiddu sprinkled with finely chopped parsley as desired.
