Ingredients
- 4 cups apples
- 1/3 cup raisins
- 2 eggs
- 2/3 cup sugar (+ one tablespoon)
- 1/2 cup butter
- 1 1/4 cups all-purpose flour
- 1/4 cup grappa
- 2 1/3 tbsp milk
- lemon juice
- Half packet baking powder (8 g)
Preparation of the Apple and Raisin Cake
Soak the raisins in the grappa.
Melt 1/2 cup of butter over low heat in a saucepan, then let it cool.
In a large bowl, beat the eggs with 2/3 cup of sugar using an electric whisk until you have a light and fluffy mixture.
Add the milk and melted butter, incorporate them into the mixture, then add the flour and baking powder.Peel the apples, divide them into quarters, and then cut one-third of them into cubes to add to the mixture; slice the rest of the apples, drizzle them with a little lemon juice, and set aside.
Drain the raisins from the grappa, squeeze them, reserve a handful, and mix the rest into the mixture.
Butter and flour a 9.5-inch (24 cm) diameter cake pan and pour in the prepared mixture.Arrange the apple slices in a radial pattern on the cake, sprinkle with the reserved raisins and top with the remaining butter cut into small pieces and a spoonful of sugar sprinkled on top.
Bake in a static oven preheated to 350°F (180°C) for thirty-five minutes.
Remove from the oven, let cool, and serve your apple and raisin cake.
