Curry chicken is a tasty Indian-origin main course, easy to prepare.
Curry (or masala) is a spice mix, including turmeric, black pepper, cumin, coriander, cinnamon, fenugreek, cloves, chili, ginger, cardamom, etc. Its use makes dishes aromatic and irresistible. The chicken curry recipe is so widespread that everyone has their version. In the following one, chicken chunks are completely covered by the spice mix and cooked with aromatics and coconut milk (or rather coconut beverage, as in Europe it is legally forbidden to use the term “milk” for derivatives that are not of animal origin). The result is a soft, creamy, and flavorful dish, which, accompanied with good basmati rice or fresh vegetables, becomes a special and perfect main course for a dinner with friends or family.

Ingredients
- 1.76 lbs chicken breast (in chunks)
- 1 scallion
- 2 cloves garlic
- 1.41 oz curry powder
- 0.42 cups rice vinegar (or apple cider vinegar)
- 2.11 cups coconut beverage (coconut milk *)
- coriander (or parsley)
- extra virgin olive oil
- salt
Preparing the Curry Chicken
Clean the scallion and cut it into rings.
Peel the garlic cloves and slice them.
Place the curry powder in a bowl and coat the chicken chunks on all sides.In a large pan, heat a little extra virgin olive oil and sauté the chicken chunks on all sides until golden.
Remove them from the pan, keeping them warm, and add another drizzle of oil in the same pan, sauté the scallion and garlic until softened.Return the chicken chunks to the pan and deglaze with the vinegar.
Add the coconut milk, lower the heat, cover with a lid, and cook for another twenty-five minutes.
Salt and immediately serve your curry chicken, garnishing as desired with fresh coriander or parsley.
