Ingredients
- 2 eggs (small)
- 3.2 oz vegetable oil
- 3.5 oz sugar
- 2.5 cups all-purpose flour
- lemon zest (grated from half a lemon)
- 1 teaspoon baking powder
- 7 oz jam (or marmalade of choice)
Preparation of the Quick Butter-Free Tart
In a large bowl, place the eggs, sugar, and vegetable oil and mix everything with a whisk until a homogeneous mixture is formed.
Add the flour, baking powder, grated lemon zest from half a lemon and mix again with the whisk until the liquids are absorbed, then knead by hand, adding a little more flour if necessary, until you have a smooth and non-sticky dough.Place three-quarters of the dough between two sheets of parchment paper and roll it out into a half-inch thick disk.
Transfer the prepared disk into a 9.5-inch diameter tart pan.
Prick the shortcrust pastry with the prongs of a fork, then fill it with the prepared jam or marmalade.Cut strips from the remaining dough and place them on the filling.
Bake your quick butter-free tart in a preheated static oven at 350°F for thirty minutes.
Remove from the oven, let it cool completely, and serve.
