Artichoke pâté is a delicious cream, very easy to prepare.

Perfect for spreading on bread or crostini, but also for dressing pasta dishes, this pâté is made with few ingredients.

Artichokes are low in calories, rich in vitamins, fiber, and minerals, purifying, and full of antioxidants. They improve liver function. They help to control cholesterol, hypertension, and diabetes. In cuisine, artichokes are widely used in preparing all types of dishes, from appetizers to main courses, side dishes, one-pot meals, etc.

Ingredients

  • 4 artichokes
  • 7/8 cup water
  • 2 tbsp extra virgin olive oil
  • 1.35 oz white wine vinegar
  • 2 cloves garlic
  • thyme
  • salt

How to Prepare Artichoke Pâté

  • Clean the artichokes following the instructions found by clicking HERE.
    Place them in a saucepan with the water specified in the recipe, white wine vinegar, extra virgin olive oil, peeled garlic cloves, a bit of thyme, and a pinch of salt, and bring to the heat.

  • Once the mixture reaches a boil, lower the heat and let it simmer for about twenty minutes until the artichokes are tender.

  • Remove the garlic cloves and blend everything with an immersion blender.
    Adjust salt to taste and serve your artichoke pâté or use it to dress your pasta dishes.
