Baked potatoes are an irresistible side dish always appreciated and perfect for accompanying any type of meal.
The best baked potatoes are crispy on the outside and soft on the inside, not greasy and soggy, and to prepare them to perfection there are tricks and tips to absolutely follow. Starting with the type of potato to use, which should be yellow-fleshed, firm, and compact, not old and starchy. A little trick is also to cut the potatoes into pieces of equal size to ensure even cooking. It is then necessary to briefly parboil them before baking or at most immerse them for at least half an hour in cold water to remove excess starch (and increase the baking time in this case). Potato side dishes are always appreciated by everyone, young and old, and they pair well with any meal.

Ingredients
- 1.8 lbs potatoes
- 1 clove garlic
- rosemary
- extra virgin olive oil
- salt
Preparation of Baked Potatoes
Peel the potatoes and cut them into chunks of the same size.
Place them in a pot, cover with cold water, and let them cook for five minutes from the boiling point to slightly soften them and remove some of the starch they contain.Drain them and let them cool for another five minutes, then place them in a bowl and season with extra virgin olive oil, gently mixing to coat them on all sides.
Salt them and place them in a baking tray leveling them so they do not overlap.Peel the garlic clove and add it to the tray along with a sprig of rosemary.
Bake in a preheated static oven at 392°F (200°C) for thirty to forty minutes (depending on the size of the chunks), until golden.
Serve your baked potatoes hot.
