Emperor’s Sweet Omelette

The emperor’s sweet omelette or kaiserschmarren is a simple and irresistible dessert of Austrian origin.

The legend says it was prepared by the court chef for Emperor Franz Joseph, who, unable to attend the court meal due to institutional commitments, asked to be served a crepe in his study. The chef, simultaneously busy preparing the court meal, overcooked the crepe and broke it while flipping, so he decided to remedy the situation by caramelizing it and serving it in pieces, sprinkled with powdered sugar and accompanied by cranberry jam. Of course, this dish won over the emperor so much that it became a traditional dish.

As such, it is served in mountain lodges in Trentino, South Tyrol, and Austria.

Ingredients

  • 3 eggs
  • 50 g sugar (+ a tablespoon for caramelizing the dessert)
  • 100 ml milk
  • 40 ml rum
  • 50 g all-purpose flour
  • 1 vanilla bean (the seeds)
  • butter
  • powdered sugar
  • cranberry jam
  • salt

Preparation of the emperor’s sweet omelette or kaiserschmarren

  • Separate the yolks from the whites and whip the whites to stiff peaks and set aside.
    In a large bowl, add the yolks, sugar, and a pinch of salt and beat until homogeneous, then incorporate the flour, milk, rum, and the seeds from a vanilla bean.

  • When your mixture is homogeneous, gently fold in the whipped egg whites with a spatula, mixing from bottom to top until perfectly incorporated.
    In a medium-large pan, melt 40 g of butter over low heat.
    Pour in the egg mixture, cover with a lid, and let cook for three to four minutes over medium heat.

  • Cut the omelette into four wedges and flip the wedges to the other side, cover the pan again and let cook for a few more minutes.
    Break the omelette wedges into shreds, sprinkle with a tablespoon of sugar and cook for one or two minutes, stirring to caramelize the pieces.
    Serve your emperor’s sweet omelette, dusting it with powdered sugar to taste, with cranberry jam.

Notes

Being a traditional recipe, there isn’t a single way to prepare this dessert: some enrich the batter with raisins soaked in the rum used to prepare the recipe, others do not use whipped egg whites, preferring to work the whole eggs into the mixture, and some scramble it instead of cooking and breaking it into pieces.
