Palermo-style Cutlets

Palermo-style cutlets are a tasty meat-based main course, light and easy to prepare.

Unlike classic cutlets, Palermo-style ones are not fried in butter and do not contain eggs, but have a delicious breading of breadcrumbs, pecorino cheese, and chopped parsley, and are grilled. The result is a tasty and flavorful dish without eggs, with a few simple ingredients, loved by both adults and children.

Ingredients

  • 1.1 lbs chicken breast (slices about half an inch thick)
  • 1.5 cups breadcrumbs
  • 1.2 oz pecorino cheese (grated)
  • parsley
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Palermo-style Cutlets

  • Use a meat tenderizer to gently pound the chicken slices to make them softer and thinner.
    Brush them with some extra virgin olive oil on all sides.

  • Place the breadcrumbs, grated pecorino cheese, a pinch of salt, pepper, and some chopped parsley in a shallow plate and mix them thoroughly.
    Coat the chicken slices in the breading, pressing to ensure it adheres well on all sides.

  • Heat the grill and cook the chicken slices for ten to fifteen minutes, turning them halfway through, until they are well grilled.
    Serve immediately, piping hot, your Palermo-style cutlets.

Notes

You can substitute chicken breast with beef round, rump, or shoulder blade.
You can also add chopped mint leaves to the breading for a fresh note.
You can store them in the fridge, cooked or raw, well-sealed in an airtight container for up to a couple of days.

  • Can they be baked in the oven?

    Palermo-style cutlets can also be baked in the oven at 375°F in static mode for fifteen minutes, or at 340°F in ventilated mode for ten minutes, turning them halfway through.

    They can be frozen raw if you have used fresh, not defrosted, meat.
