The chicory omelet is a tasty main dish made with eggs, easy to prepare and very appetizing.
Chicory is a winter vegetable rich in fiber, inulin, a non-assimilable sugar that promotes healthy bowel function, and essential minerals.

Ingredients
- 12 oz chicory
- 3 eggs
- 1/4 cup Parmesan cheese (grated)
- extra virgin olive oil
- salt
Preparation of the Chicory Omelet
Clean the chicory, cut off the base and discard the toughest and most damaged parts.
Cut into pieces.Cook them in lightly salted boiling water for five minutes, drain and let cool.
In a large bowl, beat the eggs with a tablespoon of extra virgin olive oil.
Add the grated cheese, beat again and mix in the chicory.Grease a baking pan and pour in the prepared mixture.
Bake in a preheated oven at 356°F for about twenty-five minutes, until golden.
Let it cool slightly and serve your chicory omelet.
