Fennel Soup

Fennel soup is a tasty vegetarian comfort food dish, very easy to make.

Light, warm, and comforting, it is prepared with simple ingredients, often available in the pantry, and is very tasty. Fennel has known therapeutic properties, detoxifying the body, reducing cholesterol, fighting infections, and boosting the immune system. This soup is perfect on colder days, healthy and full of flavor.

Ingredients

  • 2.2 lbs fennel
  • 7 oz stale bread
  • 1 clove garlic
  • vegetable broth
  • parsley
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Fennel Soup

  • Clean the fennel, keeping aside some of the more tender fronds, wash them and cut them into thin wedges.
    Peel the garlic.
    Heat some extra virgin olive oil in a pot.

  • Sauté the garlic and fennel for five minutes, then cover everything with broth and let it cook for twenty minutes.
    Meanwhile, slice the bread thinly and toast it in a preheated oven at 390°F for ten minutes.
    Prepare a chop with a little parsley and the reserved fennel fronds.

  • Place the bread on the bottom of each plate, cover with fennel and broth according to taste, and finish with the prepared chop and pepper to taste.
    Serve immediately, very hot, your fennel soup.
