Ingredients
- 2 3/4 cups all-purpose flour
- 2/3 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1/2 packet baking powder
- jam or preserve (of your choice)
Preparation of the Lactose-Free Jam Tart
In a large bowl, pour the flour, sugar, and baking powder, and mix thoroughly.
Create a well in the center and add the vegetable oil and the eggs, mixing with a fork to allow the liquids to be absorbed by the powders.
Knead by hand until you obtain a smooth and homogeneous dough.Form a ball, wrap it in some plastic wrap and let it rest in the refrigerator for at least an hour.
After the resting time, line a 8″ x 8″ baking pan with parchment paper.
On a lightly floured work surface, roll out two-thirds of the dough into a square and place it in the pan on the parchment paper, covering the bottom and the edges.
Fill the prepared shell with the jam or preserve of your choice.Form strips with the remaining dough and place them in a lattice pattern over the jam, folding the edges of the dough inwards.
Bake in a preheated convection oven at 350°F for thirty-five to forty minutes, until golden.
Remove from the oven and let your lactose-free jam tart cool completely before serving.
