The granular stock cube is a basic preparation made with vegetables that is very simple to make at home.

A healthy and genuine preparation, easy to make, based on vegetables that are dehydrated and blended until they reach a granular consistency that can be stored for up to a year and is perfect for preparing a quick vegetable broth, to be enjoyed on its own or to be used for making a risotto or stew, or for seasoning many other types of dishes.

Ingredients

  • 2.2 lbs vegetables (as you like: potatoes, celery, carrots, onions, etc.)
  • 10.5 oz salt (approximately)
  • parsley
  • 1 clove garlic
  • extra virgin olive oil

Preparation of Granular Stock Cube

  • Clean all the vegetables you have chosen, cut them into cubes, weigh them (net of waste) and place them in a bowl.
    Add salt in an amount equal to one-third of the weight of the previously verified vegetables and season with one chopped clove of garlic, a bit of extra virgin olive oil, and some chopped parsley, mixing thoroughly.

  • Line a baking dish or the oven tray with a sheet of baking paper and spread the seasoned vegetables on it, leveling them so as not to overlap.
    Bake in a static oven at 250°F for an hour.

  • Then transfer them to a microwave-safe dish (a few at a time so as not to overlap them), and cook at 800 Watts for five minutes (or read “FAQs” at the end of the recipe).
    Then blend them in a mixer until you obtain a fine mixture.
    Store your granular stock cube in clean glass jars, in a cool and dry place.

  • If I don’t have or don’t want to use the microwave, how can I make the granular stock cube?

    To avoid using the microwave, you can simply extend the baking time of the vegetables in the oven at 250°F by an additional five hours.
