Savoy Cabbage Soup

Ingredients

  • 21 oz savoy cabbage
  • 7 oz potatoes
  • 2 1/2 cups vegetable broth
  • extra virgin olive oil
  • salt
  • pepper

Preparation of the Savoy Cabbage Soup

  • Peel the potatoes and slice them thinly.
    Clean the savoy cabbage by removing the outer leaves and the core, wash it under running water and cut it into strips.

  • Gather all the vegetables in a large pot, add the broth and let it cook for twenty minutes, covering with a lid and lowering the flame when it starts to boil, to also use the steam for cooking, without adding more liquids.

  • When cooking is complete, turn off the heat and blend everything into a cream with an immersion blender.
    Adjust the salt and serve your savoy cabbage soup with a drizzle of extra virgin olive oil, pepper to taste, and bread croutons.
