Preparation of the Pomegranate Aperitif
Score the pomegranate vertically and split it in half.
Use a teaspoon to remove the seeds and discard all the white membranes, as they would make the juice bitter.Set aside a handful of seeds for decoration and pass the rest through a food mill to collect the juice.
Add a tablespoon of pomegranate juice to each glass of prosecco or sparkling wine and top with the reserved whole pomegranate seeds.
Serve your pomegranate aperitif.
