Sicilian octopus salad is a tasty cold dish, appetizer or main course, simple to prepare and delicious.
The octopus, cooked in a regular or pressure cooker using the procedure described below, remains tender and is cut into pieces and then enriched with carrots, celery, and green olives, becoming a fresh and perfect dish for both summer and holiday appetizers.

Ingredients
- 2.2 lbs octopus
- 2 carrots (small)
- 2 stalks celery
- 6 oz green olives (pitted)
- lemon juice
- extra virgin olive oil
- salt
- pepper
Preparation of Sicilian Octopus Salad
Bring a pot of water to a boil.
Meanwhile, clean the octopus by removing the eyes, mouth, and ink sac, and rinse it well under cold running water.When the water is boiling, salt it and dip the octopus tentacles, holding it by the head, into the boiling water and withdrawing it out three times to make the tentacles curl, then immerse the entire octopus into the pot. Cover with a lid, lower the heat, and let it cook for half an hour (to reduce cooking times, you can cook the octopus in a pressure cooker following the procedure you find by clicking HERE).
At the end of cooking, let it cool completely before removing the octopus from the pot.
Once the octopus is cold, cut it into pieces and collect it in a bowl.
Peel the carrots and cut them into thin slices.
Wash the celery stalks and cut them into pieces.Add the carrots and celery to the octopus along with the green olives, then dress everything with the juice of one lemon, extra virgin olive oil, pepper, and adjust the salt.
Mix thoroughly and serve your Sicilian octopus salad.
