Pandoro Crumble Cake

The pandoro crumble cake is a cream-filled cake made with pandoro or its leftovers, easy and delicious.

A great recycling dessert perfect as a meal ending, for a snack, or for a sweet break, filled with a delicate vanilla cream and dollops of Nutella, very delicious.

Ingredients

  • 10.5 oz pandoro
  • 2 egg yolks
  • 1/3 cup sugar
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • Half vanilla bean (seeds only)
  • 1/4 cup Nutella
  • milk
  • powdered sugar (for decoration)

Preparation of pandoro crumble cake

  • Heat the milk with the vanilla seeds.
    Meanwhile, in a saucepan, away from the heat, beat the egg yolks with the sugar until you have a smooth mixture.
    Add the flour, stirring to incorporate, and then slowly add the milk, continuing to stir, until you obtain a smooth mixture.

  • Place the saucepan on the heat, continuing to stir until your cream thickens.
    Turn off and transfer it to a wide, shallow container, leveling it and covering it with a piece of plastic wrap in contact with the surface of the cream.
    Let it cool.

  • Cut thin slices from the pandoro to place in a 20 cm (8 inch) round springform pan, completely covering the bottom and sides, pressing down slightly with your hands to thin it out, and cut the rest of the pandoro into cubes, setting them aside.
    Moisten with a little milk.

  • Pour the cream into the pandoro shell you created, distribute the Nutella in dollops over the cream, and then cover the entire surface with the pandoro cubes.
    Bake in a preheated static oven at 375°F for about fifteen minutes, until golden.
    Remove from the oven and let your pandoro crumble cake cool for a couple of hours to set.
    When ready to serve, decorate as desired with a dusting of powdered sugar.
