Christmas Tree of Mini Pizzas

Ingredients

  • 14 oz all-purpose flour
  • 0.35 oz fresh yeast (*see the notes at the end of the recipe)
  • 7 oz tomato sauce
  • 2.5 oz grated mozzarella
  • 1 cup water (warm)
  • 1 teaspoon sugar
  • basil
  • extra virgin olive oil
  • salt

Preparation of the Christmas Tree of Mini Pizzas

  • Crumble the fresh yeast in a small bowl.
    Add the sugar and some of the water taken from the total needed for the recipe and mix to dissolve the yeast well.
    Place the flour in a bowl.
    Make a well in the center, add the yeast mixture and a tablespoon of extra virgin olive oil, and start mixing everything with a fork, gradually adding the rest of the water.

  • Once it is incorporated into the flour, transfer to a floured work surface and knead thoroughly and decisively until you have a homogeneous mixture.
    Add a heaping teaspoon of fine salt, incorporate it into the dough, then form a ball and place it in an oiled bowl.
    Cover the bowl with some plastic wrap and let the dough rise in a warm place away from drafts (the turned-off oven is perfect) until doubled in volume.

  • When the dough has risen, preheat the oven to 428°F in static mode.
    In a small bowl, put the tomato sauce and season it with a bit of salt and a drizzle of extra virgin olive oil.
    Line a large baking sheet with parchment paper.
    Divide the dough into 16 equal pieces, which you will first shape into balls and then flatten slightly, and arrange the flattened balls to form a Christmas tree, as in the photo.

  • Top the surface of the balls with a tablespoon of seasoned tomato sauce and bake on the lowest rack of the oven.
    Let cook for ten minutes, then remove from the oven, add the mozzarella to each ball, a drizzle of extra virgin olive oil, and bake again, this time on the middle rack of the oven, for another eight minutes.
    Take out and serve immediately, piping hot, your Christmas tree of mini pizzas, sprinkling it with fresh basil leaves if desired.
