Apple Roast

The apple roast is a tasty meat-based main course, easy to make and very tantalizing.

Based on pork loin (also known as loin or back), a delicate and less fatty meat, but perfect for cooking as a roast because it doesn’t dry out and doesn’t become stringy, and delicious apples, which give a sweet and slightly sour taste. It is a perfect dish for Sunday lunch, dinner with friends, but also for holidays, at Christmas or Easter.

Ingredients

  • 28 oz pork loin
  • 26.5 oz apples
  • 1 glass white wine
  • 1 clove garlic
  • broth (vegetable or meat)
  • rosemary
  • extra virgin olive oil
  • salt

Preparation of Apple Roast

  • Peel the apples and cut them into chunks of the same size.
    Place the loin on a cutting board.
    Chop the rosemary, mix it with some salt, and massage the mixture onto the meat to flavor it.
    Peel the garlic.

  • In a saucepan, heat five tablespoons of extra virgin olive oil.
    Let the garlic clove brown, then add the meat, browning it on all sides.
    Deglaze with white wine, and when the alcohol has evaporated, add the apples and cover everything with boiling broth.
    Cover the pot with a lid and let it cook over medium heat for fifty minutes, turning the roast occasionally to cook it evenly.

  • At the end of cooking, remove the meat from the pot, keeping it in a sheet of aluminum foil, well wrapped.
    Blend some of the apples with an immersion blender to obtain a creamy sauce with some pieces of apple still whole.
    Cut the apple roast into thin slices and serve it with the prepared sauce.
