The lactose-free Christmas jam cookies are delicious and easy to make.
Simple ingredients almost always found in your pantry, a few tricks, and lots of tastiness for cookies that melt in your mouth, easy to make and irresistible, and also lactose-free, perfect for those intolerant. Moreover, they keep for at least a week if stored well in tin or airtight containers, making them perfect as gifts!

Ingredients
- 3 1/4 cups all-purpose flour
- 3/4 cup potato starch
- 1 1/4 cups powdered sugar (+ extra for decorating the cookies)
- 3/4 cup vegetable oil
- 1 1/4 tsp baking powder
- 1 packet vanillin
- 2 eggs
- jam (or any chosen preserve)
Preparation of Christmas Jam Cookies
In a large bowl, combine the flour, potato starch, powdered sugar, vanillin, and baking powder. Mix them together.
Create a well in the center of the dry ingredients and pour in the vegetable oil, mixing thoroughly.
Add the eggs and knead with determination until you have a smooth and homogeneous dough.
Shape into a ball and wrap it in plastic wrap.
Let it rest in the refrigerator for at least an hour.After this time, take the dough out, knead it briefly and roll it out on a work surface to a thickness of about 1/5 inch.
Cut out stars using a medium-sized cookie cutter and place them on a baking tray lined with parchment paper, leaving a little space between them.
With a smaller star-shaped cutter, cut out the center of half the cookies obtained (pressing the edges slightly after the cut should allow you to remove the center of the cookie more easily without breaking it).Re-knead the scraps and prepare more cookies in the same way until all the dough is used up.
Bake in a preheated static oven at 350°F for about twelve minutes, until lightly golden.
Remove from the oven and let the cookies cool completely on a wire rack.
Place a teaspoon of jam or chosen preserve on whole cookies.Dust the holed cookies with powdered sugar and place them, picking them up by the edges, on the filled cookies, pressing gently to adhere.
Serve your Christmas jam cookies or store them in an airtight container or tin box.
