Soft amaretti are delicious almond-based cookies or pastries, tasty and easy to make.

Without flour, butter, or milk, but made with almonds, sugar, and egg whites, they are easy to prepare and keep well stored in an airtight or tin box, making them perfect for gifting, for instance, at Christmas.

This is a typical recipe from a town in the province of Savona, Sassello, but widespread throughout Italy with some variations, like all traditional recipes.

Ingredients

  • 9 oz peeled almonds
  • 2 egg whites
  • 9 oz sugar
  • Half vial almond flavoring
  • powdered sugar

Preparation of Soft Amaretti

  • Place the almonds and sugar in a food processor and pulse until you get a very fine mixture.
    In a large bowl, beat the egg whites to stiff peaks.
    Put the almond mixture in a bowl and add the beaten egg whites and the almond flavoring.

  • Gently mix with a spatula until you get a homogeneous dough.
    Place some powdered sugar on a plate.
    Take pieces of dough weighing about 1 oz and form them into balls.

  • Roll the balls in the powdered sugar to completely coat them and place them on a baking tray lined with parchment paper, keeping them spaced apart.
    Put the baking tray in the refrigerator for half an hour.

  • Bake in a preheated static oven at 320°F for about 20 minutes until lightly golden.
    Remove from the oven, let cool, and serve your soft amaretti or store them in a tin or airtight box.
