Ingredients

  • 14 oz savoy cabbage (in cleaned leaves)
  • 7 oz potatoes
  • 1 onion (small)
  • 3 cups vegetable broth
  • extra virgin olive oil
  • salt

Preparation of Savoy Cabbage and Potato Cream Soup

  • Wash the savoy cabbage well and cut it into strips.
    Peel the potatoes and cut them into small pieces.
    Chop the onion.

  • In a large pot, heat a few tablespoons of extra virgin olive oil and let the onion brown.
    Add the potatoes and savoy cabbage and stir to flavor.
    Add the hot vegetable broth and let it cook over low heat for half an hour.

  • At the end of cooking, use an immersion blender to puree everything, mix, and adjust the salt.
    Serve immediately, piping hot, your savoy cabbage and potato cream soup, optionally finishing with a drizzle of extra virgin olive oil and croutons.
