Fried Eggs with Pumpkin

Fried eggs with pumpkin are a tasty main course, easy and quick to prepare.

Few ingredients for a rich and very simple dish, perfect for a quick meal for both adults and children. Eggs are a pantry staple, and a real joker in the kitchen for all the recipes you can prepare. Pumpkin, a symbol of the autumn season, is perfect for creating a rich accompaniment to the eggs, for a complete main dish, perhaps to be enjoyed with a few slices of good homemade bread.

Ingredients

  • 4 eggs
  • 12 oz pumpkin (already cleaned)
  • 1 shallot
  • rosemary
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Fried Eggs with Pumpkin

  • Cut the pumpkin into small cubes.
    Chop the shallot.
    Heat a drizzle of extra virgin olive oil in a pan and sauté the shallot with a sprig of rosemary.

  • Remove the rosemary and add the pumpkin, stir to flavor, season with salt and pepper, and cover with a lid.
    Let cook for fifteen minutes until the pumpkin has softened.

  • Gently crack the eggs into a small bowl and slide them onto the pumpkin, ensuring the yolk does not break.
    Cover the pan again with the lid and let cook for another five minutes, then turn off and serve your fried eggs with pumpkin.
