Pumpkin Chicken Breast

Ingredients

  • 1.75 lbs chicken breast (sliced)
  • 1.1 lbs pumpkin
  • flour
  • milk
  • extra virgin olive oil
  • salt

Preparation of Pumpkin Chicken Breast

  • Clean the pumpkin and cut it into cubes.
    Heat a drizzle of extra virgin olive oil in a large pan and cook the pumpkin for fifteen minutes over medium heat.

  • Meanwhile, flour the chicken breast slices well on all sides.
    When the pumpkin has softened, mash it gently with a fork and add a few tablespoons of milk.

  • Add the floured chicken slices, arranging them in the pan so that they do not overlap, and let them cook for about ten minutes on each side.
    Adjust the salt and serve your pumpkin chicken breast hot, garnished with its own cooking sauce.
