Parmesan cream is a tasty cheese-based cream, very easy to prepare and very appetizing.

Based on Parmesan, it resembles a béchamel in preparation, but it is much denser and perfect, for example, for spreading on bread or croutons, or for filling canapés and sandwiches like a savory mousse, or for seasoning pasta or rice in very tasty first courses.

Ingredients

  • 7 oz whole milk
  • 3.5 oz Parmesan cheese (grated)
  • 1.5 tbsp butter
  • 2.5 tbsp all-purpose flour

Preparation of the Parmesan cream

  • Warm the milk until it almost boils.
    Meanwhile, in another saucepan melt the butter over low heat.

  • Add the flour gradually and stir with a whisk until you get a golden mixture.
    Gradually add the hot milk, continuing to stir with the whisk, and let it cook over low heat until the mixture thickens.

  • Remove the saucepan from the heat and add the grated cheese little by little, stirring continuously with the whisk to incorporate it without forming lumps, until your mixture is quite thick.
    Store your Parmesan cream in an airtight container in the refrigerator for up to a couple of days.
