Eggs alla Carrettiera

Eggs alla Carrettiera are a delicious and tasty second course made with eggs, incredibly easy and quick to prepare.

Inspired by the legendary pasta alla carrettiera, an ancient dish of Sicilian origin, they partly replicate its seasoning and are a truly simple lunch or dinner saver, with simple ingredients always present in the pantry.

Eggs are a highly nutritious food, rich in high-quality proteins, vitamin A, vitamin B, vitamin B12, folic acid, essential amino acids, iron, potassium, phosphorus, and vitamin D.

Ingredients

  • 8 eggs
  • 1 oz pecorino cheese (grated)
  • 1 oz breadcrumbs
  • 1 clove garlic
  • parsley (chopped)
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Eggs alla Carrettiera

  • Peel the garlic, chop it, placing it in a small bowl and add the breadcrumbs.
    Add a pinch of salt and some pepper and mix.

  • Heat a drizzle of oil in a non-stick pan and let the breadcrumb mixture toast for a few minutes.
    Transfer the mixture to a bowl and add the grated cheese and chopped parsley, mixing thoroughly.

  • Pour a drizzle of extra virgin olive oil into the pan and gently crack the eggs into it.
    Sprinkle them with the breadcrumb, cheese, and parsley mixture and cook them for a few minutes over medium heat.
    Serve your eggs alla carrettiera immediately, nice and hot.
