Orange Caprese Cake

The orange Caprese cake is a delicious cake made with almonds, orange, and white chocolate, easy to make and irresistible.

A variation of the classic Caprese cake with almonds and dark chocolate, the orange Caprese is fragrant and irresistible due to the presence of orange zest and candied orange peel and white chocolate.

Perfect for any occasion, moist and soft, from breakfast to snack to dessert.

Ingredients

  • 3 eggs
  • 2.5 oz powdered sugar (+ extra for decorating the cake)
  • 1/4 cup vegetable oil
  • 1 cup almond flour
  • 1/4 cup potato starch
  • 3.5 oz white chocolate
  • 1.5 oz candied orange peel (click to read the recipe to make them at home)
  • orange zest (grated from one orange)
  • lemon zest (grated from one lemon)
  • Half packet baking powder

Preparation of the Orange Caprese Cake

  • Coarsely chop the white chocolate.
    In a large bowl, beat the eggs with 70 g of powdered sugar and the grated zest of the orange and lemon until you obtain a light and fluffy mixture.

  • Gradually incorporate the vegetable oil.
    Add the almond flour, potato starch, and baking powder.
    Finally, incorporate the white chocolate and chopped candied orange peel.
    Line a 8-inch diameter cake pan with a sheet of dampened and wrung-out parchment paper.

  • Pour the prepared mixture into the pan and bake on the lowest rack in a preheated static oven at 392°F for five minutes.
    Without opening the oven, lower the temperature to 338°F and continue baking for another thirty-five minutes or so, doing the toothpick test to check the cake’s doneness.

  • Remove from the oven and let your orange Caprese cake cool completely before removing it from the pan and gently removing the parchment paper.
    Place it on a serving platter and finish by sprinkling it with powdered sugar to taste before serving.
