Baked Pumpkin with Gorgonzola

Baked pumpkin with gorgonzola is a tasty side dish, very easy to prepare.

Pumpkin, a symbol of autumn, lends itself to many easy and delicious side dish recipes. With its sweet and rich flavor, it creates an irresistible combination with the strong and tangy taste of gorgonzola, as in the pumpkin and gorgonzola risotto.

Instead, by baking cubed pumpkin and gorgonzola with a few other ingredients, you get a perfect dish to enjoy with good homemade bread, as a main or second course, or to accompany meat or even fish dishes.

Ingredients

  • 0.88 lbs pumpkin
  • 4.23 oz gorgonzola
  • 1 tbsp breadcrumbs
  • 1 tbsp grana (grated)
  • extra virgin olive oil
  • salt

Preparation of Baked Pumpkin with Gorgonzola

  • Clean the pumpkin, removing the skin, seeds, and fibers, and cut it into cubes.
    Place the pumpkin cubes in a baking dish and season them with a drizzle of extra virgin olive oil and salt, mixing thoroughly.

  • Cut the gorgonzola into pieces and distribute them over the pumpkin.
    In a small bowl, mix the breadcrumbs and grated cheese, then sprinkle over the pumpkin cubes.

  • Bake everything in a preheated static oven at 392°F for about twenty minutes, until the desired level of browning.
    Remove from the oven and serve your baked pumpkin with gorgonzola.
