Ingredients
- 1.5 lbs potatoes
- 1.75 oz grana cheese (grated)
- 1 egg
- breadcrumbs
- extra virgin olive oil
- salt
Preparation of Baked Potato Croquettes
Wash the potatoes, place them in a pot, cover with cold water, and bring to the heat.
Let them cook for twenty minutes, half an hour from the start of boiling until they can be easily pierced with a fork.
Drain them, let them cool slightly, and then peel them.Mash them with a potato masher and collect the puree in a bowl.
Add the grated cheese, egg, and salt.
Mix thoroughly until you get a homogeneous dough.
Place some breadcrumbs on a plate and line a baking tray with a sheet of parchment paper.Shape the dough into walnut-sized balls, roll them in the breadcrumbs, coating them on all sides, and place them on the tray.
Continue in the same way until all the dough is used up.Finish with a drizzle of extra virgin olive oil and bake in a preheated oven at 350°F in static mode for twenty minutes, then switch to grill mode for a few more minutes until golden.
Let your baked potato croquettes cool slightly before serving.
