Yogurt and Carrot Bundt Cake

Ingredients

  • 3 eggs
  • 3/4 cup sugar
  • 2 cups carrots
  • 1/2 cup plain yogurt
  • 1 3/4 cups all-purpose flour
  • 1 cup almond flour
  • 3 1/2 tbsp vegetable oil
  • Half packet baking powder
  • orange zest (grated from one orange)
  • powdered sugar (for decoration)

Preparation of Yogurt and Carrot Bundt Cake

  • Peel the carrots, wash them, dry them, and cut them into chunks.
    Place them in a blender with the vegetable oil and yogurt and blend until smooth and homogeneous.

  • In a large bowl with electric beaters, beat the eggs with the sugar and grated orange zest until light and fluffy, then add the carrot and yogurt mixture, mixing again to incorporate perfectly.
    Add the almond flour, all-purpose flour, and baking powder.

  • Grease and flour a 9-inch bundt cake pan and pour in the prepared mixture.
    Bake in a preheated static oven at 340°F for about an hour, testing with a skewer after half an hour, which should come out clean.
    Remove from oven, let cool in the pan, then transfer to a serving plate and sprinkle with powdered sugar as desired before serving.
