Grandma’s Potato Soup

Grandma’s potato soup is a classic comfort food dish that is simple, easy, and quick to prepare, perfect for warming up on the coldest days.

A simple dish that evokes childhood, warm and comforting, with many variations to suit everyone’s taste: with rice, small pasta, or other types of pasta, plain or with tomato sauce or paste, all united by cooking with diced potatoes.

Ingredients

  • 14 oz potatoes
  • 5.64 oz ridged ditalini
  • 4 cups vegetable broth
  • 2 tablespoons tomato purée
  • Half onion
  • rosemary
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Grandma’s Potato Soup

  • Clean the onion and slice it thinly.
    Peel the potatoes and dice them.

  • In a large pot, heat some extra virgin olive oil and sauté the onion until golden, then add a sprig of rosemary and the diced potatoes.
    Sauté for a few minutes, stirring constantly, remove the rosemary and add the vegetable broth and tomato purée.

  • Stir and cook over medium heat for five minutes, then add the pasta, adjust the salt, and cook for about ten more minutes, checking the pasta’s doneness.
    Turn off the heat and serve immediately, very hot, your grandma’s potato soup adding some pepper and grated cheese to taste.
