Pumpkin Purée

Pumpkin purée is a delicious autumn side dish, simple and light, easy to make.

Pumpkin is the symbol of autumn in the kitchen, so versatile that it is used in many preparations, both sweet and savory, from appetizers to desserts. It is always a perfect side dish to accompany meat and chicken main courses, or to enjoy as a vegetarian dish.

The purée is simply made with pumpkin, milk, a bit of cheese, and some spices to taste, resulting in a side dish with a delicate taste and lighter than the classic potato purée.

Ingredients

  • 2.2 lbs pumpkin
  • 2/3 cup milk
  • 2 tbsps Parmesan cheese (grated)
  • 1 tbsp extra virgin olive oil
  • rosemary (chopped)
  • salt
  • pepper

Preparation of Pumpkin Purée

  • Clean the pumpkin, removing seeds and fibers, cut it into pieces and peel it.
    Place it on a baking tray lined with parchment paper and bake for about twenty minutes in a preheated static oven at 356°F, until it softens.

  • Pass it through a food mill, collecting the purée in a pot.
    Add the grated cheese, a pinch of salt, and some chopped rosemary, and place on low heat, gradually adding the milk while stirring continuously until your pumpkin purée is smooth and fluffy.

  • Add the extra virgin olive oil and stir again to incorporate it.
    Turn off the heat and serve your purée sprinkled with a bit more chopped rosemary if desired.
