Ingredients
- 1.1 lbs potatoes
- 14 oz tomato pulp
- 2 cloves garlic
- oregano
- extra virgin olive oil
- salt
Preparation of Potatoes alla Pizzaiola
Wash the potatoes with their skin on and place them in a pot. Cover them with cold water and bring the pot to the stove. Let them cook for twenty minutes from the boiling point, then drain and let them cool slightly.
Meanwhile, peel the garlic cloves and sauté them in a large pan with a drizzle of extra virgin olive oil.Add the tomato pulp, a sprinkle of oregano, and salt.
Cover the pan with a lid, lower the heat, and let the sauce reduce for about fifteen minutes, stirring occasionally.When the potatoes are warm, peel them and slice them.
Add them to the prepared sauce, stir gently to avoid breaking them, and let them cook together for five minutes to blend the flavors well.
Turn off the heat and serve your potatoes alla pizzaiola immediately.
