Mediterranean Pumpkin

The Mediterranean pumpkin is a delicious vegetarian side dish, simple and irresistible, very easy to prepare.

An autumn recipe based on pumpkin and a few other simple ingredients rich in flavor, typical Mediterranean tastes, in a really easy to make and irresistible dish, perfect to accompany any type of main course, meat or fish, with eggs, or even just as a vegetarian main course, suitable for all occasions.

Ingredients

  • 1 lb pumpkin
  • 7 oz cherry tomatoes
  • 2 red onions
  • black olives
  • oregano
  • breadcrumbs
  • extra virgin olive oil
  • salt

Preparation of Mediterranean Pumpkin

  • Clean the pumpkin, removing seeds and strings, peel it and cut it into slices about half an inch thick.
    Put them in a bowl.
    Wash the cherry tomatoes, cut them in half, and add them to the pumpkin.

  • Peel the onions and cut them into not too thin wedges.
    Add the black olives and season everything with a bit of oregano, salt, and extra virgin olive oil, mixing thoroughly.
    Line a baking tray with parchment paper and transfer the prepared vegetables onto it.

  • Sprinkle them with some breadcrumbs and bake in a preheated oven at 356°F in static mode for thirty minutes, switching to grill function in the last minutes of cooking to brown them.
    Remove from the oven and serve your Mediterranean pumpkin immediately.
