Ingredients

  • 1 1/2 cups rice (for risotto)
  • 14 oz pumpkin (already cleaned)
  • 10 1/2 oz sausage
  • 1 glass white wine
  • 1 onion
  • vegetable broth
  • butter
  • grated Parmesan
  • extra virgin olive oil
  • salt

Preparation of Pumpkin and Sausage Risotto

  • Cut the pumpkin into cubes.
    Crumb the sausage.
    Clean and chop the onion.

  • In a saucepan, heat a few tablespoons of extra virgin olive oil and a knob of butter.
    Sauté the chopped onion, then add the crumbled sausage. Let it brown on all sides and add the pumpkin cubes.
    Let it flavor, stirring for a few minutes and add the rice.

  • Let it toast, deglaze everything with the white wine and as soon as it has evaporated, add a ladle of broth at a time, until the rice is cooked.
    When the rice is cooked, stir in some butter and grated cheese and serve your pumpkin and sausage risotto hot.
