Soft Lactose-Free Cookies

Soft and irresistible, without milk, butter, or other dairy products, with simple ingredients, without molds or special tools, they are perfect any time of the day, from breakfast to a snack or for a sweet break.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 packet baking powder
  • 1 packet vanillin

Preparation of Soft Lactose-Free Cookies

  • Beat the eggs with the sugar using a whisk.
    Gradually add the vegetable oil while continuing to whisk.
    Then mix with a fork, adding the flour, vanillin, and baking powder.

  • When you have a homogeneous mixture, with lightly floured hands, quickly work the dough to form a dough ball.
    Wrap it in plastic wrap and let it rest in the refrigerator for at least an hour.
    After resting, take the prepared dough and form balls the size of a walnut.

  • Place them on a baking sheet lined with parchment paper, spacing them apart.
    Bake in a preheated oven at 350°F for ten minutes: they will remain fairly light.
    Remove from the oven and let your soft lactose-free cookies cool completely on a wire rack before storing them in an airtight container or a tin box.
    They will keep for about a week.
