Pistachio cookies or almond pistachio cookies are delicious treats from Sicilian pastry, similar to almond cookies, very easy to make at home.

With a few ingredients, including almond flour and pistachio flour that make them tasty and irresistible, crunchy on the outside and soft inside: a delight for the palate, not just for pistachio lovers.

Ingredients

  • 2 egg whites
  • 1 3/4 cups pistachio flour
  • 1 1/4 cups almond flour
  • 1 2/3 cups powdered sugar (+ some for working the dough)
  • 1 teaspoon honey

Preparation of Pistachio Cookies

  • In a large bowl, place the egg whites and beat them with a hand whisk.
    When they become frothy, add the almond flour and pistachio flour, powdered sugar, and honey, and mix with the whisk until the liquid part is absorbed, then proceed to knead by hand.
    Form a dough, wrap it in some plastic wrap, and let it rest in the refrigerator for at least an hour.

  • After the resting time, sprinkle the work surface with some powdered sugar and place the prepared dough on it.
    Use a rolling pin to flatten it slightly, giving it approximately the shape of a rectangle about an inch thick.
    Place some powdered sugar on a plate.

  • With a dough cutter, cut pieces of five to six inches from the dough, first giving them a cylindrical shape, roll them in powdered sugar, then place them on a baking sheet lined with parchment paper and slightly fold the edges of the cylinder in opposite directions to form an S shape.

  • Proceed in this way to form all your pistachio cookies, placing them slightly apart on the baking sheet.
    Bake them in a preheated oven, at 340°F in static mode, for fifteen minutes, then remove them from the oven and let them cool completely on a wire rack.
    Store them in an airtight container or a tin box for up to four or five days.

  • I cannot find pistachio flour for the pistachio cookies, what can I do?

    You can simply get the same amount of unsalted pistachios, finely chop them in a mixer, and use the obtained mixture instead of the pistachio flour provided in the recipe.
