Ingredients

  • 2 3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 8 tbsp butter
  • 3.4 fl oz vegetable oil
  • 1 egg (small)
  • 1 tsp baking powder
  • jam (or preserves of choice)

Preparation of Shortcrust Pastries with Jam

  • In a large bowl, use an electric mixer to work the softened butter with the sugar until you obtain a homogeneous mixture.
    Add the vegetable oil slowly, continuing to work the mixture with the mixers, until fully incorporated, then incorporate the egg.

  • Add the flour and baking powder little by little, using the mixer at low speed.
    After this operation, cover the bowl with plastic wrap and place it in the refrigerator to rest for about ten minutes.

  • Grease and flour a mini muffin pan.
    Form dough balls about 1 1/4 inches in diameter and place them in the pan.
    Bake in a preheated oven, at 350°F in static mode, for nine minutes.

  • Keeping the pastries in the pan, gently press their center with the back of a wooden spoon, fill them with the jam or preserves of your choice, and return the pan to the oven for another five minutes until lightly golden.
    Remove from the oven and gently remove your shortcrust pastries with jam from the pan (so you can grease it again to make more pastries with the same method, until the prepared dough is used up).
