Ingredients
- 4 slices rustic bread
- 3.5 oz smoked scamorza (cut into thin slices)
- 2.1 oz anchovy fillets in oil
- parsley
Preparation of Smoked Scamorza and Anchovy Bruschetta
Drain the anchovy fillets from the preservation oil and remove any bones.
Clean the parsley with damp kitchen paper and chop it.
Heat a grill or griddle.Place the bread slices on it without overlapping and toast them for three minutes on the first side, then flip them over.
Place the scamorza slices on the already toasted top side of the bread, trying not to reach the edges.Add the anchovy fillets and cook for a few more minutes, covering with a lid, until the cheese has melted.
Serve immediately, piping hot, your smoked scamorza and anchovy bruschetta sprinkled with a little chopped parsley if desired.
