Grandma’s cake in a glass is a tasty dessert, easy to make and irresistible.

Grandma’s cake is a dessert of Tuscan origin that became a classic in the restaurant scene in the 80s and 90s. The traditional recipe, which you can find HERE, is based on shortcrust pastry, custard, and pine nuts.

The glass version is simpler and uses Digestive-type biscuits instead of the pastry and a custard that’s easy to make and delicious, along with the essential pine nuts that characterize this dessert.

Ingredients

  • 4 egg yolks
  • 1/2 cup sugar
  • 1 1/2 cups milk
  • 1/4 cup all-purpose flour
  • 1 tbsp cornstarch
  • Half teaspoon lemon zest (grated from half a lemon)
  • 2 oz pine nuts
  • 5 1/2 oz Digestive-type biscuits
  • 1/3 cup butter

Preparation of Grandma’s Cake in a Glass

  • Heat the milk with the grated lemon zest.
    In another saucepan, away from the heat, beat the egg yolks and sugar with a whisk until smooth, then incorporate the flour and cornstarch.
    Add the warm milk gradually, always stirring with the whisk, and place the saucepan on the heat, continuing to stir until the cream thickens.

  • Chop half of the pine nuts, add them to the cream, transfer it to a bowl, and cover with plastic wrap placed directly on the surface of the cream.
    Chill in the fridge until ready to use.
    Melt the butter in a saucepan over low heat or in the microwave.
    Chop half of the biscuits into a powder in the mixer and mix them with the melted butter.

  • Crumble the rest of the biscuits, not too finely.
    Divide the biscuit and butter mixture into serving glasses, compacting it with the back of a spoon. Cover with a couple of tablespoons of the prepared cream, then make a layer with the coarsely crumbled biscuits.
    Cover with more cream and complete your grandma’s cake in a glass by sprinkling the surface with pine nuts and crumbled biscuits.
